Mix all the ingredients, except the lime peel, mint and pineapple in a shaker or blender. Pour the mixture into a chilled double old-fashioned glass. Garnish with the lime peel, mint sprig and fresh pineapple. This is the original recipe as created by Vic Bergeron of Trader Vics fame. Legend goes that Vic experimented with the drink one night and gave it to a Tahitian friend who happened to be in his restaurant one night.
